Communing with the chickens earlier today on an adventure to @willowwittranch. And I learned some fun facts about eggs along the way!
SS FUN FACTS.
Eggs actually pop out with an enzyme cuticle layer around them that is a protective barrier from bacteria. It also keeps water and oxygen inside to maintain freshness. Mother Nature knows what's up!
This cuticle gets washed off before it goes to grocery stores. But left on, it enables eggs to be naturally unrefrigerated for around 50 days!
The US is the only country that washes and refrigerates eggs, due to fear of salmonella.
Some experts say it actually increases the chance of the bacteria, because it makes it porous...thus more vulnerable to infection.

SLEUTH TIP: If you get local direct-from-a-farm eggs...left unwashed, they will last at least 2 weeks or more un-refrigerated. And 3 months or more refrigerated! Washed eggs will last at least two months in the refrigerator, but won’t taste as fresh as unwashed eggs of the same age.
